Week 2: Kathleen: Potato Pancakes with Turkey Kielbasa

So I made potato pancakes and turkey kielbasa the other night and I got the recipe for potato pancakes from The Joy of Cooking- I’m sure that you guys have had potato pancakes but maybe not this recipe:

Pare and grate coarsely until you have 2 cups grated potatoes. Fold the gratings in a Muslim towel and wring the towel to extract as much moisture from the potatoes as possible. Place them in a bowl. Beat 3 eggs well and stir them into the potatoes. Combine and sift: 1.5 TBSP all purpose flour and 1.5 tsp. salt. Add to the flour mixture with 1-3 tsp. grated onion. Heavy oil in a heavy skillet. Place spoonfuls of the potato mixture in the skillet, forming them into patties. Let them brown, then turn and brown the other side until crisp. These are usually hot with applesauce or sour cream. Served with a fried egg.
The turkey was bought ready made at the store and just heated up and served with maple syrup. 
I don’t have pictures but it’s really delicious, hearty and easy to make AND good to reheat for breakfast!
